Including moderate amounts of healthy fats in our meals promote proper digestion and stabilize blood sugar levels. They do this by slowing down the emptying of your stomach, which delays the rise in blood glucose and insulin after a meal by stimulating the secretion of hormones (peptide 1,cholecystokinin23) required to signal fullness. This helps prevent sudden cravings and overeating. Ayurveda also considers the qualities (guna) and effects (karma) of fats on the body and mind. For example, ghee (clarified butter) is considered sattvic (pure), nourishing, calming, and rejuvenating; whereas fried foods are considered tamasic (dull), heavy, clogging, and depressing.
